Keto Reuben is a great way to get all your favorite flavors of a classic Reuben sandwich but without the carbs. This keto Reuben in a bowl is both satisfying and low carb (and a Trim Healthy Mama S Fuel).
Reubens are one recipe I can’t stray from.
But, while I love a good rye bread, it doesn’t fit into the keto lifestyle.
And if you are a Trim Healthy Mama, the rye bread and Reuben fillings create a crossover. (Still on plan, but not conducive to weight loss!)
So, instead of dreaming of something I shouldn’t eat, here is this wholesome recipe with a healthy twist.
Taco shells made out of cheese = the ultimate keto hack. We’re basically talking about frico, an Italian cooking method in which cheese is cooked in a pan until slightly crispy but malleable. Here’s we’re baking little mounds of cheddar and shaping them into handheld cups.
These are not authentic or traditional tacos by any means. But, if you’re a fan of Tex-Mex ground beef tacos and are trying to follow a low-carb diet, these are a fun option.
Pro tip: Cutting parchment paper into individual squares makes transferring the cheese to the muffin tin easier, but you can also carefully peel the cheese off with your hands or use a metal spatula to lift them up. Be sure to give them a minute to cool before transferring
Extra cheese holds the tender meatballs perfectly together without use of any type of flour. A breeze to whip up makes these the perfect weeknight dinner for everyone and leaving you plenty of time whip up a Keto Banana Bread for something extra! We use all ground beef in these meatballs, but they work well with other types of ground meat as well. Ground turkey and ground pork both are great or a combination of ground pork and beef makes for exceptional meatballs.

When you’re in a starvation state, your body uses ketones for energy in a similar way to how they’re used on a ketogenic or keto fit diet — for fuel — and converts them into glucose.
